When the Sbaas were ready to open their own restaurant in 1994, their friend, Aidan Gill, the New Orleans barber and haberdasher, helped them find a small and rustic Uptown building on Maple Street. It was there that the couple focused on showcasing Tunisia's polyglot food.
Jamila learned to cook from her mother, the go-to chef at her family's large gatherings in Tunisia. Moncef used to collect fresh eggs from chickens in his family's backyard, and his uncle ran an olive oil press next door to the town's bakery. "Everything was manual," he said. "And that place is still there."
